Chicken with Roasted Garlic and Mushrooms
serves 4
Ingredients
- 1 lb chicken tenders
- 1 head garlic, roasted and pureed
- 1/2 C flour
- 1 ea medium onion, sliced
- 1/2 lb mushrooms, sliced
- 3 ea scallions, chopped
Instructions
- Season the chicken with salt and pepper, coat with flour, then sauté in oil. Remove and set aside.
- Heat 1/2 T olive oil to the pan, then cook the onions until tender. Add the mushrooms and continue cooking until tender. Add the chicken and roasted garlic puree.
- Plate and garnish with the scallions.
